Turkey Burger Salad

Ingredients

  • 1 (20 oz) pkg lean ground turkey
  • 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • ⅓ cup panko breadcrumbs
  • ¾ cup minced red onion, divided
  • 5 Tbsp chopped fresh mint, divided
  • 2 tsp salt-free Greek seasoning
  • 1 tsp lemon zest
  • 1 large egg
  • ¾ tsp salt, divided
  • 1 English cucumber, cut into half-moons
  • 3 Roma tomatoes, chopped
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp pepper
  • 1 (10-oz) pkg baby spinach

Instructions

  1. Stir together turkey, chopped spinach, breadcrumbs, ¼ cup red onion, 2 Tbsp mint, Greek seasoning, lemon zest, egg, and ½ tsp salt in a large bowl.
  2. Shape mixture into 6 patties.
  3. Preheat grill or grill pan to medium-high heat. Cook patties, covered, 7 to 8 minutes per side or until no longer pink in center.
  4. Meanwhile, stir together cucumber, tomatoes, ½ cup red onion, 3 Tbsp mint, lemon juice, oil and ¼ tsp each salt and pepper.
  5. Divide baby spinach among 6 plates; top with cucumber mixture and burgers.
