Pork Chops with Chimichurri Sauce
Lemony Fennel-Arugula SaladIngredients
- ½ cup packed fresh parsley leaves
- ¼ cup packed fresh cilantro leaves
- 1 shallot, minced
- 2 cloves garlic, chopped
- 2½ Tbsp avocado oil, divided
- 1 Tbsp red wine vinegar
- ¼ tsp crushed red pepper
- 2 (6-oz) bone-in pork chops
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Process parsley, cilantro, shallot, garlic, 2 Tbsp avocado oil, vinegar, and red pepper in a blender until smooth. Set aside in a bowl until ready to serve.
- Preheat grill to medium-high heat. Rub pork with ½ Tbsp avocado oil, and sprinkle with salt and black pepper.
- Grill pork, covered, 6 to 8 minutes per side or until a meat thermometer inserted into thickest portion reads 145°F. Serve pork with Chimichurri Sauce.
Side Dish Ingredients
- ½ lemon
- 3 tsp olive oil
- 1 tsp honey
- 1 (5-oz) pkg baby arugula
- ½ fennel bulb, thinly sliced
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Grate zest and squeeze juice from lemon half. Whisk together lemon juice, zest, oil, and honey in a bowl. Add arugula and fennel; toss. Sprinkle with salt and pepper.
