Pork Chops with Chimichurri Sauce

Ingredients

  • ½ cup packed fresh parsley leaves
  • ¼ cup packed fresh cilantro leaves
  • 1 shallot, minced
  • 2 cloves garlic, chopped
  • 2½ Tbsp avocado oil, divided
  • 1 Tbsp red wine vinegar
  • ¼ tsp crushed red pepper
  • 2 (6-oz) bone-in pork chops
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Process parsley, cilantro, shallot, garlic, 2 Tbsp avocado oil, vinegar, and red pepper in a blender until smooth. Set aside in a bowl until ready to serve.
  2. Preheat grill to medium-high heat. Rub pork with ½ Tbsp avocado oil, and sprinkle with salt and black pepper.
  3. Grill pork, covered, 6 to 8 minutes per side or until a meat thermometer inserted into thickest portion reads 145°F. Serve pork with Chimichurri Sauce.

  • ½ lemon
  • 3 tsp olive oil
  • 1 tsp honey
  • 1 (5-oz) pkg baby arugula
  • ½ fennel bulb, thinly sliced
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Grate zest and squeeze juice from lemon half. Whisk together lemon juice, zest, oil, and honey in a bowl. Add arugula and fennel; toss. Sprinkle with salt and pepper.
