Roasted Red Pepper Meat Loaf
Garlicky Spinach and SquashIngredients
- ¾ lb grass-fed ground beef
- ½ onion, minced
- ¼ cup chopped roasted red peppers
- 2 Tbsp tomato paste
- 2 Tbsp almond flour
- 2 cloves garlic, minced
- 1 large egg, lightly beaten
- 1 tsp paprika
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F. Mix together all ingredients in a bowl. Shape into a 10- x 5-inch loaf on a lightly greased rack in a broiler pan.
- Bake 50 minutes to 1 hour or until center is no longer pink. Cover with foil to prevent over browning, if needed.

- 1 yellow squash, sliced
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- ½ (10-oz) pkg spinach
- ¼ tsp kosher salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté squash and garlic in hot oil in a nonstick skillet over medium-high heat 3 to 4 minutes or until tender.
- Gradually add spinach, stirring until wilted. Sprinkle with salt and pepper.
