Ingredients

  • 3½ lb beef stew meat
  • 1⁄3 cup all-purpose flour
  • 2 tsp salt
  • 1 tsp pepper
  • 1⁄4 cup olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 6 cups less sodium beef broth
  • 1 1⁄2 cups red wine
  • 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano
  • 1 Tbsp dried basil
  • 1 Tbsp dried parsley
  • 2 large Russet potatoes, peeled and cut into 1-inch pieces
  • 3 large carrots, peeled and chopped
  • 3 stalks celery, chopped
  • 1 (8-oz) pkg whole mushrooms, quartered
  • 1 cup frozen sweet peas, thawed

Instructions

  1. Place beef, flour, salt, and pepper in a zip-top plastic bag. Seal bag, and shake to coat beef.
  2. Cook beef, in 2 batches, in hot oil in a large Dutch oven over medium-high heat until browned, stirring occasionally. Return all beef to pot.
  3. Add onion and garlic to pot. Cook 2 minutes, stirring occasionally.
  4. Stir in broth, wine, tomatoes, basil, and parsley. Cover, reduce heat, and simmer 2 hours, stirring occasionally.
  5. Add potatoes, carrots, celery, and mushrooms. Cover, and simmer 30 minutes or until beef and vegetables are tender. Stir in peas; cook 5 minutes longer.
