Comfort Beef Stew

Ingredients
- 3½ lb beef stew meat
- 1⁄3 cup all-purpose flour
- 2 tsp salt
- 1 tsp pepper
- 1⁄4 cup olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 6 cups less sodium beef broth
- 1 1⁄2 cups red wine
- 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano
- 1 Tbsp dried basil
- 1 Tbsp dried parsley
- 2 large Russet potatoes, peeled and cut into 1-inch pieces
- 3 large carrots, peeled and chopped
- 3 stalks celery, chopped
- 1 (8-oz) pkg whole mushrooms, quartered
- 1 cup frozen sweet peas, thawed
Instructions
- Place beef, flour, salt, and pepper in a zip-top plastic bag. Seal bag, and shake to coat beef.
- Cook beef, in 2 batches, in hot oil in a large Dutch oven over medium-high heat until browned, stirring occasionally. Return all beef to pot.
- Add onion and garlic to pot. Cook 2 minutes, stirring occasionally.
- Stir in broth, wine, tomatoes, basil, and parsley. Cover, reduce heat, and simmer 2 hours, stirring occasionally.
- Add potatoes, carrots, celery, and mushrooms. Cover, and simmer 30 minutes or until beef and vegetables are tender. Stir in peas; cook 5 minutes longer.
