Ingredients
- 1½ lb smoked sausage, sliced
- 2 cups chopped onion
- 2 stalks organic celery, chopped
- 6 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp ground cinnamon
- ½ tsp pepper
- 4 organic red potatoes, cubed
- 1 (48-oz) carton low-sodium chicken broth
- 5 cups chopped kale
Instructions
- Cook sausage in a Dutch oven over medium heat 5 to 7 minutes or until browned; drain. Add onion and celery; cook until tender. Add garlic, paprika, cinnamon, and pepper; cook 2 minutes.
- Add potatoes and broth; bring to a boil. Reduce heat to low, cover and cook 20 minutes or until potatoes are tender when pierced with a fork.
- Add kale, in batches, until combined.
Side Dish Ingredients
- 1 (14-oz) loaf French bread (preferably whole wheat), sliced crosswise
- 2 Tbsp olive oil
- 2 cloves garlic, halved
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 400°F. Place bread slices on a large rimmed baking sheet; drizzle with oil. Bake 10 to 15 minutes or until lightly toasted.
- Rub each slice of bread with cut sides of garlic. sprinkle with cheese. Bake 2 to 3 minutes or until cheese is melted.
