Ingredients

  • 1½ lb smoked sausage, sliced
  • 2 cups chopped onion
  • 2 stalks organic celery, chopped
  • 6 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • ½ tsp pepper
  • 4 organic red potatoes, cubed
  • 1 (48-oz) carton low-sodium chicken broth
  • 5 cups chopped kale

Instructions

  1. Cook sausage in a Dutch oven over medium heat 5 to 7 minutes or until browned; drain. Add onion and celery; cook until tender. Add garlic, paprika, cinnamon, and pepper; cook 2 minutes.
  2. Add potatoes and broth; bring to a boil. Reduce heat to low, cover and cook 20 minutes or until potatoes are tender when pierced with a fork.
  3. Add kale, in batches, until combined.

Side Dish Ingredients

  • 1 (14-oz) loaf French bread (preferably whole wheat), sliced crosswise
  • 2 Tbsp olive oil
  • 2 cloves garlic, halved
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 400°F. Place bread slices on a large rimmed baking sheet; drizzle with oil. Bake 10 to 15 minutes or until lightly toasted.
  2. Rub each slice of bread with cut sides of garlic. sprinkle with cheese. Bake 2 to 3 minutes or until cheese is melted.
