Ingredients

  • ¾ cup frozen corn kernels
  • ¾ cup frozen cubed sweet potato
  • 1 tsp salt-free Southwest seasoning
  • ⅛ tsp salt
  • ¾ cup rinsed and drained canned black beans
  • 4 corn tortillas, heated
  • ½ avocado, sliced
  • ½ cup crumbled queso fresco
  • 3 Tbsp chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Sprinkle corn and potato with Southwest seasoning and salt. Cook in a large skillet coated with cooking spray over medium-high heat 8 to 10 minutes or until browned and tender.
  2. Stir in beans, and cook 4 to 5 minutes or until thoroughly heated.
  3. Divide corn mixture among tortillas. Top with avocado, cheese, and cilantro. Serve with lime wedges.
