Corn, Black Bean, and Sweet Potato Tacos

Ingredients
- ¾ cup frozen corn kernels
- ¾ cup frozen cubed sweet potato
- 1 tsp salt-free Southwest seasoning
- ⅛ tsp salt
- ¾ cup rinsed and drained canned black beans
- 4 corn tortillas, heated
- ½ avocado, sliced
- ½ cup crumbled queso fresco
- 3 Tbsp chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Sprinkle corn and potato with Southwest seasoning and salt. Cook in a large skillet coated with cooking spray over medium-high heat 8 to 10 minutes or until browned and tender.
- Stir in beans, and cook 4 to 5 minutes or until thoroughly heated.
- Divide corn mixture among tortillas. Top with avocado, cheese, and cilantro. Serve with lime wedges.
