Creamy Chicken Quesadillas

Ingredients

  • 2 burrito-size flour tortillas
  • 3 Tbsp mayonnaise
  • ¼ tsp ground cumin
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • ⅛ tsp cayenne pepper
  • 1 cup shredded rotisserie chicken
  • ⅔ cup shredded Monterey Jack cheese
  • 1 green onion, thinly sliced
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 400°F. Place tortillas on a greased rimmed baking sheet.
  2. Combine mayonnaise, cumin, paprika, garlic powder, and, if desired, cayenne in a bowl. Add chicken; toss to coat.
  3. Spoon chicken mixture onto one side of each tortilla. Top with cheese and onion. Fold tortillas over filling; brush tortillas with oil. Bake 8 to 10 minutes or until cheese is melted and tortillas are lightly browned. Cut into wedges.

  • 2 Tbsp olive oil vinaigrette
  • 1 Tbsp lime juice
  • ½ tsp ground cumin
  • 2 cups chopped romaine lettuce

Side Dish Instructions

  1. Whisk together vinaigrette, lime juice, and cumin in a bowl. Add lettuce; toss.
