Creamy Chicken Quesadillas
Simple Romaine Salad
Ingredients
- 2 burrito-size flour tortillas
- 3 Tbsp mayonnaise
- ¼ tsp ground cumin
- ¼ tsp paprika
- ¼ tsp garlic powder
- ⅛ tsp cayenne pepper
- 1 cup shredded rotisserie chicken
- ⅔ cup shredded Monterey Jack cheese
- 1 green onion, thinly sliced
- 2 tsp olive oil
Instructions
- Preheat oven to 400°F. Place tortillas on a greased rimmed baking sheet.
- Combine mayonnaise, cumin, paprika, garlic powder, and, if desired, cayenne in a bowl. Add chicken; toss to coat.
- Spoon chicken mixture onto one side of each tortilla. Top with cheese and onion. Fold tortillas over filling; brush tortillas with oil. Bake 8 to 10 minutes or until cheese is melted and tortillas are lightly browned. Cut into wedges.

- 2 Tbsp olive oil vinaigrette
- 1 Tbsp lime juice
- ½ tsp ground cumin
- 2 cups chopped romaine lettuce
Side Dish Instructions
- Whisk together vinaigrette, lime juice, and cumin in a bowl. Add lettuce; toss.
