Thai Coconut-Curry Turkey Meatballs

Ingredients

  • ½ lb ground turkey
  • ¾ tsp curry powder
  • ½ tsp dried basil
  • ½ tsp ground ginger, divided
  • ¼ cup panko breadcrumbs
  • 1 large egg yolk, lightly beaten
  • ⅓ cup chopped onion
  • ⅓ cup chopped green bell pepper
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • 1½ Tbsp red curry paste
  • ¾ cup canned unsweetened coconut milk
  • 2 Tbsp chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Stir together turkey, curry powder, dried basil, ¼ tsp ginger, breadcrumbs, and egg. Shape mixture into 2-inch meatballs; place on a greased rack on a rimmed baking sheet. Bake 20 minutes.
  2. Meanwhile, cook onion, bell pepper, and garlic in hot oil in a deep skillet over medium heat 5 minutes. Stir in curry paste and ¼ tsp ginger; cook 1 minute.
  3. Add coconut milk; bring to a boil, reduce heat, and simmer 5 minutes. Add meatballs to skillet, and cook 5 minutes or until sauce is slightly thickened. Sprinkle with fresh basil.

  • ½ cup long-grain white rice
  • 2 cups spinach

Side Dish Instructions

  1. Cook rice according to package directions; spoon into a bowl. Add spinach, and toss until wilted.
