Sweet Potato and Black Bean Quesadillas

Ingredients

  • 2 (10-oz) pkg frozen sweet potatoes
  • 1 tsp salt free chipotle seasoning 
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ onion, chopped
  • 3 cloves garlic, minced 
  • ½ Tbsp olive oil 
  • 4 soft taco size low carb tortillas 
  • 1 (15-oz) can low sodium black beans, rinsed and drained 
  • ½ cup shredded Parmesan cheese 

Instructions

  1. Microwave sweet potatoes according to package directions; mash to desired consistency. Stir in chipotle seasoning, cinnamon, salt, and pepper.
  2. Meanwhile, cook onion and garlic in hot oil on a large skillet over medium-high heat 4 to 5 minutes or until tender; stir into mashed potatoes.
  3. Top half of each tortilla with sweet potato mixture, beans, and cheese. Fold in half over filling .
  4. Cook quesadillas, in batches, over medium heat 2 minutes per side or until browned and cheese melts.
