Sweet Potato and Black Bean Quesadillas

Ingredients
- 2 (10-oz) pkg frozen sweet potatoes
- 1 tsp salt free chipotle seasoning
- ½ tsp cinnamon
- ¼ tsp salt
- ¼ tsp pepper
- ½ onion, chopped
- 3 cloves garlic, minced
- ½ Tbsp olive oil
- 4 soft taco size low carb tortillas
- 1 (15-oz) can low sodium black beans, rinsed and drained
- ½ cup shredded Parmesan cheese
Instructions
- Microwave sweet potatoes according to package directions; mash to desired consistency. Stir in chipotle seasoning, cinnamon, salt, and pepper.
- Meanwhile, cook onion and garlic in hot oil on a large skillet over medium-high heat 4 to 5 minutes or until tender; stir into mashed potatoes.
- Top half of each tortilla with sweet potato mixture, beans, and cheese. Fold in half over filling .
- Cook quesadillas, in batches, over medium heat 2 minutes per side or until browned and cheese melts.
