Hash Brown Bowls

Ingredients

  • 4 frozen hash brown patties
  • 4 plant based breakfast sausage patties
  • 4 large eggs
  • 2 tsp butter
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup shredded reduced fat Colby Jack cheese
  • ½ cup refrigerated salsa

Instructions

  1. Cook hash browns according to package directions; break up into large pieces, and divide among 4 bowls.
  2. Cook sausage according to package directions; coarsely chop, and divide among bowls.
  3. Beat eggs in a bowl. Melt butter in a large nonstick skillet over medium heat; add eggs, and cook without stirring until beginning to set on bottom.
  4. Sprinkle with salt and pepper; cook, stirring constantly, until thickened and set. Divide among bowls, and sprinkle with cheese. Serve with salsa.
