Hash Brown Bowls
Ingredients
- 4 frozen hash brown patties
- 4 plant based breakfast sausage patties
- 4 large eggs
- 2 tsp butter
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup shredded reduced fat Colby Jack cheese
- ½ cup refrigerated salsa
Instructions
- Cook hash browns according to package directions; break up into large pieces, and divide among 4 bowls.
- Cook sausage according to package directions; coarsely chop, and divide among bowls.
- Beat eggs in a bowl. Melt butter in a large nonstick skillet over medium heat; add eggs, and cook without stirring until beginning to set on bottom.
- Sprinkle with salt and pepper; cook, stirring constantly, until thickened and set. Divide among bowls, and sprinkle with cheese. Serve with salsa.
