Sausage and Potato Frittata
Winter Spinach SaladIngredients
- 1 (16-oz) pkg ground pork sausage
- 3 cups frozen diced hash browns, thawed
- 12 large eggs
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
- 1 cup shredded Italian-blend cheese
Instructions
- Preheat oven to 350°F. Cook sausage in a large ovenproof skillet over medium heat, stirring occasionally, until browned and crumbly. Stir in hash browns.
- Whisk together eggs, garlic powder, salt, and pepper in a bowl. Add to skillet, and cook, stirring, 2 minutes. Sprinkle with cheese. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.
Side Dish Ingredients
- 1 orange
- 1 (5-oz) pkg spinach
- ½ cup pomegranate seeds
- ½ cup refrigerated lemon vinaigrette
- ⅓ cup chopped walnuts
Side Dish Instructions
- Peel, section, and dice orange. Toss together orange and remaining ingredients in a bowl.
