Tuna, Sweet Potato, and Apple Hash with Eggs
Ingredients
- ½ lb sweet potatoes, peeled and cut into 1-inch cubes
- ½ onion, chopped
- 1 Tbsp avocado oil, divided
- ¼ tsp salt
- ¼ tsp pepper
- 2 tsp ghee
- 1 Granny Smith apple, chopped
- ½ tsp dried thyme
- ½ (5-oz) pkg baby spinach
- 2 tsp apple cider vinegar
- 1 (5-oz) can wild-caught albacore tuna, drained and flaked
- 2 large eggs
Instructions
- Preheat oven to 425°F. Toss together potatoes, onion, 2 tsp oil, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 25 minutes or until potatoes are browned and tender.
- Meanwhile, melt ghee in a nonstick skillet over medium heat. Add apple and thyme; cook, stirring often, 5 minutes or until just tender. Gradually add spinach, stirring until wilted. Add vinegar; cook 30 seconds.
- Toss together potato mixture, apple mixture, and tuna.
- Heat 1 tsp oil in a nonstick skillet over medium heat; crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
- Top each serving of hash with 1 fried egg; season with salt and pepper, if desired.
