Seared Ham Steaks with Apples

Ingredients

  • ½ (1-lb) ham steak, cut into 2 pieces
  • ¼ tsp pepper
  • 2 tsp coconut oil
  • ½ Gala apple, sliced
  • ½ onion, sliced
  • ¼ cup organic beef broth
  • 1 tsp Dijon mustard
  • ¼ tsp dried thyme

Instructions

  1. Sprinkle ham with pepper. Melt oil in a skillet over medium-high heat. Add ham, and cook 3 minutes per side; remove from skillet, and keep warm.
  2. Add apples and onion to skillet; reduce heat to medium. Sauté 5 minutes or until browned and tender.
  3. Return ham to skillet; add broth, mustard, and thyme. Simmer over medium heat 5 minutes or until liquid is slightly thickened.

Side Dish Ingredients

  • ½ lb Brussels sprouts, trimmed
  • 1 tsp coconut oil
  • 1 clove garlic, minced
  • 1 Tbsp apple cider vinegar
  • ¼ tsp salt
  • ¼ tsp sodium-free lemon-pepper seasoning

Side Dish Instructions

  1. Thinly slice Brussels sprouts. Melt oil in a nonstick skillet over medium heat; add garlic and Brussels sprouts. Cook 2 minutes, stirring constantly.
  2. Add vinegar, salt, and lemon-pepper. Cook 4 to 5 minutes or until vinegar is evaporated.
