Oven-Fried Chicken with Marinara Sauce

Ingredients

  • 1½ lb thin sliced boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 3 large eggs
  • ¾ cup almond flour
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp dried thyme
  • 2 cups no-sugar-added marinara sauce, heated

Instructions

  1. Preheat oven to 450°F. Sprinkle chicken with salt and pepper. Beat eggs lightly in a shallow bowl. Combine flour, onion powder, garlic powder, and thyme in a second shallow bowl.
  2. Dip chicken in beaten egg; dredge in flour mixture. Place on a lightly greased rack on a rimmed baking sheet.
  3. Bake 15 minutes or until chicken is done and lightly browned. Serve with heated marinara sauce.

  • 1 (4-lb) spaghetti squash
  • 2 Tbsp olive oil
  • 2 tsp dried basil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Halve squash and remove seeds. Place squash, cut sides down, in a microwavable dish. Cover with plastic wrap, venting corner.
  2. Microwave at HIGH 8 to 12 minutes or until tender; let stand 10 minutes.
  3. Scrape spaghetti-like strands from squash using a fork. Toss squash strands with oil, basil, garlic powder, onion powder, salt, and pepper.
