Oven-Fried Chicken with Marinara Sauce
Italian Spaghetti SquashIngredients
- 1½ lb thin sliced boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 3 large eggs
- ¾ cup almond flour
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp dried thyme
- 2 cups no-sugar-added marinara sauce, heated
Instructions
- Preheat oven to 450°F. Sprinkle chicken with salt and pepper. Beat eggs lightly in a shallow bowl. Combine flour, onion powder, garlic powder, and thyme in a second shallow bowl.
- Dip chicken in beaten egg; dredge in flour mixture. Place on a lightly greased rack on a rimmed baking sheet.
- Bake 15 minutes or until chicken is done and lightly browned. Serve with heated marinara sauce.

- 1 (4-lb) spaghetti squash
- 2 Tbsp olive oil
- 2 tsp dried basil
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Halve squash and remove seeds. Place squash, cut sides down, in a microwavable dish. Cover with plastic wrap, venting corner.
- Microwave at HIGH 8 to 12 minutes or until tender; let stand 10 minutes.
- Scrape spaghetti-like strands from squash using a fork. Toss squash strands with oil, basil, garlic powder, onion powder, salt, and pepper.
