Buffalo-Style Turkey Burgers

Ingredients

  • ¼ cup hot sauce
  • 2 Tbsp ghee
  • 3 Tbsp lemon juice, divided
  • 2 lb ground turkey
  • ¼ cup finely chopped celery
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp avocado oil
  • ½ cup Whole30 compliant mayonnaise
  • 3 Tbsp chopped fresh parsley
  • 1 tsp dried dill
  • 18 green leaf lettuce leaves
  • 2 tomatoes, thinly sliced
  • ½ cup thinly sliced red onion

Instructions

  1. Heat hot sauce, ghee, and 1 Tbsp lemon juice in a saucepan over medium heat, stirring often.
  2. Combine turkey, celery, 2 Tbsp hot sauce mixture, salt, and pepper; shape into 6 patties.
  3. Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 5 to 7 minutes per side or until no longer pink.
  4. Meanwhile, combine mayonnaise, 2 Tbsp lemon juice, parsley, and dill.
  5. Arrange lettuce leaves in 6 stacks. Top with patties, remaining hot sauce mixture, mayonnaise mixture, tomatoes, and onion.
  6. Wrap lettuce around burgers; serve immediately.

  • 4 large sweet potatoes, peeled
  • 3 Tbsp avocado oil
  • ½ tsp salt
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Preheat oven to 425°F. Cut potatoes into ½-inch-thick wedges.
  2. Toss together potato wedges, oil, and salt on a large rimmed baking sheet.
  3. Bake 30 to 35 minutes or until tender, stirring once halfway through cooking. Toss with garlic while hot.
