Pork Fried Rice

Ingredients
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 1½ lb ground pork
- 1 onion, chopped
- 2 Tbsp vegetable oil
- 1 (12-oz) pkg frozen peas and carrots, thawed
- 3 large eggs, lightly beaten
- ¼ cup gluten-free less-sodium soy sauce
Instructions
- Cook rice according to package directions.
- Meanwhile, cook pork and onion in hot oil in a large skillet over medium-high heat 6 minutes. Add peas and carrots; cook 5 minutes or until tender. Add rice; cook 2 minutes.
- Push rice mixture to the side. Add eggs to center of skillet; cook, stirring constantly, until scrambled. Combine eggs with rice mixture; stir in soy sauce.
