Garlic Shrimp with Sweet Chili Aioli

Ingredients

  • 1 Tbsp butter
  • ¾ lb peeled and deveined, large raw shrimp
  • 1 Tbsp minced garlic, divided
  • ¼ cup mayonnaise
  • 2 Tbsp sweet chili sauce
  • 1 tsp lemon juice

Instructions

  1. Melt butter in a skillet over medium-high heat. Add shrimp and 2 tsp garlic; cook 2 to 3 minutes per side or until shrimp turn pink.
  2. Stir together mayonnaise, chili sauce, lemon juice, and 1 tsp garlic.

  • ½ (20-oz) pkg frozen broccoli stir-fry medley
  • 2 tsp olive oil
  • 3 Tbsp chopped roasted, salted peanuts
  • 1 Tbsp less-sodium soy sauce

Side Dish Instructions

  1. Cook vegetables in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender.
  2. Stir in nuts and soy sauce.
