Ham and Asparagus Frittata
Everything Chopped Salad
Ingredients
- 10 large eggs
- 1 tsp salt
- ½ tsp pepper
- 1 lb asparagus, trimmed and cut into 1-inch pieces
- ½ lb diced ham
- 1 Tbsp minced garlic
- 2 Tbsp olive oil
Instructions
- Preheat broiler. Whisk together eggs, salt, and pepper.
- Sauté asparagus, ham, and garlic in hot oil in a large cast-iron skillet over medium-high heat 3 to 5 minutes or until tender and browned. Reduce heat to medium. Add eggs to skillet; stir quickly.
- Cook, without stirring, until eggs begin to set. Transfer skillet to oven.
- Broil 3 to 5 minutes or until top is golden and eggs are firm. Cut into wedges.
