Ham and Asparagus Frittata

Ingredients

  • 10 large eggs
  • 1 tsp salt
  • ½ tsp pepper
  • 1 lb asparagus, trimmed and cut into 1-inch pieces
  • ½ lb diced ham
  • 1 Tbsp minced garlic
  • 2 Tbsp olive oil

Instructions

  1. Preheat broiler. Whisk together eggs, salt, and pepper.
  2. Sauté asparagus, ham, and garlic in hot oil in a large cast-iron skillet over medium-high heat 3 to 5 minutes or until tender and browned. Reduce heat to medium. Add eggs to skillet; stir quickly.
  3. Cook, without stirring, until eggs begin to set. Transfer skillet to oven.
  4. Broil 3 to 5 minutes or until top is golden and eggs are firm. Cut into wedges.
