Italian Sausage and Spinach Pasta

Ingredients
- 1 (12-oz) pkg orecchiette pasta
- 1 (20-oz or 1-lb) pkg mild Italian ground pork sausage
- 2 Tbsp minced garlic
- ¾ cup whipping cream
- 1 (5-oz) pkg baby spinach
- ½ cup freshly grated Parmesan cheese
- 1 cup thinly sliced sun-dried tomatoes in oil
- 1 cup shredded mozzarella cheese
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water.
- Meanwhile, cook sausage in a large nonstick skillet over medium-high heat 10 to 12 minutes or until browned and crumbly. Drain; return to skillet. Add garlic; cook 1 minute.
- Add whipping cream and pasta water; simmer 4 minutes or until thickened.
- Toss hot cooked pasta, sausage and cream, spinach, Parmesan, and sun-dried tomatoes in pasta pot.
- Gradually stir in mozzarella. Season with pepper, if desired.
