Ingredients
- ½ lb lean ground beef
- ¼ cup whole wheat panko breadcrumbs
- ½ tsp Italian seasoning
- 1 Tbsp Worcestershire sauce
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 Tbsp olive oil, divided
- ½ onion, sliced
- ½ (8-oz) pkg sliced mushrooms
- 1 cup low-sodium beef broth
- ½ Tbsp cornstarch
Instructions
- Combine beef, breadcrumbs, seasoning, Worcestershire sauce, and ¼ tsp each salt and pepper; shape into 2 patties.
- Cook patties in ½ Tbsp hot oil in a nonstick skillet 2 to 3 minutes per side or until browned. Remove and keep warm.
- Sauté onion and mushrooms in ½ Tbsp hot oil in skillet 8 minutes or until browned and tender.
- Whisk together broth and cornstarch; add to skillet. Return patties to skillet; bring to a boil, and cook 5 minutes or until gravy is thickened and patties are done.
Side Dish Ingredients
- ½ cup long-grain brown rice
- ½ lb carrots, sliced
- 1 Tbsp butter
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook rice according to package directions.
- Steam carrots in a steamer basket over simmering water 7 minutes or until tender. Transfer to a bowl; stir in butter, salt, and pepper.
