Ingredients

  • ½ lb lean ground beef
  • ¼ cup whole wheat panko breadcrumbs
  • ½ tsp Italian seasoning
  • 1 Tbsp Worcestershire sauce
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 Tbsp olive oil, divided
  • ½ onion, sliced
  • ½ (8-oz) pkg sliced mushrooms
  • 1 cup low-sodium beef broth
  • ½ Tbsp cornstarch

Instructions

  1. Combine beef, breadcrumbs, seasoning, Worcestershire sauce, and ¼ tsp each salt and pepper; shape into 2 patties.
  2. Cook patties in ½ Tbsp hot oil in a nonstick skillet 2 to 3 minutes per side or until browned. Remove and keep warm.
  3. Sauté onion and mushrooms in ½ Tbsp hot oil in skillet 8 minutes or until browned and tender.
  4. Whisk together broth and cornstarch; add to skillet. Return patties to skillet; bring to a boil, and cook 5 minutes or until gravy is thickened and patties are done.

Side Dish Ingredients

  • ½ cup long-grain brown rice
  • ½ lb carrots, sliced
  • 1 Tbsp butter
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Steam carrots in a steamer basket over simmering water 7 minutes or until tender. Transfer to a bowl; stir in butter, salt, and pepper.
