Bistro Beef-Stuffed Peppers

Ingredients

  • 1½ lb grass-fed ground beef
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1½ Tbsp Montreal steak seasoning
  • ¼ cup almond flour
  • 2 Tbsp tomato paste
  • ½ tsp salt
  • ½ tsp pepper
  • 6 large green bell peppers

Instructions

  1. Preheat oven to 350°F. Cook beef, onion, garlic, and seasoning in a large nonstick skillet over medium-high heat 10 minutes or until beef is browned and crumbly. Transfer to a bowl; stir in flour, tomato paste, salt, and pepper.
  2. Cut tops off bell peppers; discard seeds and membranes. Stuff beef mixture into bell peppers. Place stuffed peppers in a large baking dish.
  3. Bake 30 minutes or until bell peppers are tender.

Side Dish Ingredients

  • 2 large sweet potatoes, peeled and cut into ½-inch-thick wedges
  • 2 Tbsp avocado oil
  • 1 tsp paprika
  • 2 cloves garlic, minced
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 350°F. Toss together potatoes and oil on a large rimmed baking sheet. Sprinkle with paprika, garlic, onion powder, salt, and pepper; toss.
  2. Bake 30 minutes or until browned and tender, turning once.
