Curry-Glazed Chicken Drumsticks

Ingredients
- ½ cup honey
- ¼ cup butter, melted
- ¼ cup yellow mustard
- 1 Tbsp curry powder
- 1 tsp salt
- 3 lb chicken drumsticks
Instructions
- Preheat oven to 375°F. Whisk together honey, melted butter, mustard, curry powder, and salt in a large bowl. Add chicken, and toss to coat.
- Place coated chicken in a single layer on a large foil-lined rimmed baking sheet. Bake 55 minutes to 1 hour and 10 minutes or until chicken is done.
Side Dish Ingredients
- 1½ cups long-grain white rice
- 1 Tbsp olive oil
- 1 (13.5-oz) can unsweetened coconut milk
- ⅔ cup water
- ½ tsp salt
- 1 (12-oz) pkg frozen green peas
Side Dish Instructions
- Cook rice in hot oil in a large saucepan over medium-high heat until lightly browned.
- Add coconut milk, water, and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat; fluff with a fork.
- Steam peas according to package directions; season with salt and pepper, if desired.
