Beef Burrito Bowls

Ingredients
- 1½ cups long-grain white rice
- ¼ cup chopped fresh cilantro
- 2 Tbsp lime juice
- 1½ lb ground beef
- 2 tsp ground cumin
- 2 tsp chili powder
- 1 (15-oz) can black beans, rinsed and drained
- 1 (8-oz) block Monterey Jack cheese, shredded
- 1 (8-oz) pkg shredded iceberg lettuce
- 3 Roma tomatoes, chopped
- 1 (11-oz) pkg tortilla chips
Instructions
- Cook rice according to package directions; stir in cilantro and lime juice.
- Meanwhile, cook beef in a large nonstick skillet over medium-high heat until browned and crumbly; drain and return to skillet. Stir in cumin and chili powder.
- Heat beans according to package directions. Divide rice among 6 bowls. Top with beef mixture, beans, cheese, lettuce, and tomato. Serve with tortilla chips.
