Beef Burrito Bowls

Ingredients

  • 1½ cups long-grain white rice
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp lime juice
  • 1½ lb ground beef
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (8-oz) block Monterey Jack cheese, shredded
  • 1 (8-oz) pkg shredded iceberg lettuce
  • 3 Roma tomatoes, chopped
  • 1 (11-oz) pkg tortilla chips

Instructions

  1. Cook rice according to package directions; stir in cilantro and lime juice.
  2. Meanwhile, cook beef in a large nonstick skillet over medium-high heat until browned and crumbly; drain and return to skillet. Stir in cumin and chili powder.
  3. Heat beans according to package directions. Divide rice among 6 bowls. Top with beef mixture, beans, cheese, lettuce, and tomato. Serve with tortilla chips.
