Red Pepper-Kale Everything Bagel Casserole

Ingredients

  • 2 whole wheat bagels, cut into 2-inch pieces
  • 1 small red bell pepper, chopped
  • 1 cup chopped kale
  • ½ (2.5-oz) pkg fully cooked bacon, crumbled
  • 4 large eggs
  • ¾ cup reduced fat ultra filtered milk
  • 2 oz Greek cream cheese, softened
  • ¼ tsp pepper
  • ½ cup shredded less fat white Cheddar cheese 
  • 2 tsp everything but the salt seasoning

Instructions

  1. Layer bagels, bell pepper, kale, and bacon in a lightly greased baking dish.
  2. Whisk together eggs, milk, cream cheese, and pepper in a large bowl; pour over bagel mixture. Sprinkle with Cheddar. Cover and chill overnight.
  3. Let casserole stand at room temperature 30 minutes. Preheat oven to 375°F. Bake 40 to 50 minutes or until set and golden brown. Serve casserole sprinkled with seasoning.

  • 4 Roma tomatoes, cut into wedges
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper
