Red Pepper-Kale Everything Bagel Casserole
Balsamic TomatoesIngredients
- 2 whole wheat bagels, cut into 2-inch pieces
- 1 small red bell pepper, chopped
- 1 cup chopped kale
- ½ (2.5-oz) pkg fully cooked bacon, crumbled
- 4 large eggs
- ¾ cup reduced fat ultra filtered milk
- 2 oz Greek cream cheese, softened
- ¼ tsp pepper
- ½ cup shredded less fat white Cheddar cheese
- 2 tsp everything but the salt seasoning
Instructions
- Layer bagels, bell pepper, kale, and bacon in a lightly greased baking dish.
- Whisk together eggs, milk, cream cheese, and pepper in a large bowl; pour over bagel mixture. Sprinkle with Cheddar. Cover and chill overnight.
- Let casserole stand at room temperature 30 minutes. Preheat oven to 375°F. Bake 40 to 50 minutes or until set and golden brown. Serve casserole sprinkled with seasoning.

- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
