Smoky Pork Tenderloin, Sweet Potatoes, and Broccoli
Ingredients
- 2 (1-lb) pork tenderloins, trimmed
- 3 Tbsp olive oil, divided
- 2 tsp smoked paprika
- ¾ tsp salt, divided
- ½ tsp pepper, divided
- 2 large sweet potatoes, cut into thin wedges
- 1 tsp garlic powder
- 2 (12-oz) pkg broccoli florets
Instructions
- Preheat oven to 425°F. Rub pork with 1 Tbsp oil, smoked paprika, and ¼ tsp each salt and pepper. Place on a lightly greased large rimmed baking sheet.
- Toss potatoes with 1 Tbsp oil, garlic powder, and ¼ tsp each salt and pepper; scatter around pork on pan.
- Bake 10 minutes, turning pork and potatoes after 10 minutes.
- Meanwhile, toss together broccoli, 1 Tbsp oil, and ¼ tsp salt; add to baking sheet. Bake 15 minutes longer or until pork is done and vegetables are tender. Let pork stand 10 minutes before slicing.
