Ingredients

  • 6 low-carb, whole-wheat burrito-size tortillas
  • 1¾ cups marinara sauce, divided
  • ½ (6-oz) pkg less-sodium pepperoni
  • 1 (8-oz) block mozzarella cheese, shredded
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Place tortillas on a large greased rimmed baking sheet. Spread 1 cup marinara sauce on one half of tortillas. Top with pepperoni and cheese. Fold tortillas over filling; brush tortillas with oil.
  2. Bake 8 to 10 minutes or until cheese melts and tortillas are lightly browned. Serve with remaining marinara sauce.

  • ⅓ cup balsamic vinaigrette

Side Dish Instructions

  1.  Toss together salad blend and vinaigrette in a bowl.
