Cranberry-Balsamic Chicken
Goat Cheese Mashed Sweet Potatoes

Ingredients
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- ¼ tsp salt
- ⅛ tsp pepper
- 1½ Tbsp olive oil, divided
- ¼ cup sliced sweet onions
- ⅔ cup fresh cranberries
- 3 Tbsp balsamic vinegar
- 2 Tbsp maple syrup
- 3 sprigs fresh thyme
- 2 tsp lemon juice
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done. Remove from skillet, and keep warm.
- Sauté onions in ½ Tbsp hot oil in skillet over medium-high heat 5 minutes. Add cranberries, vinegar, syrup, and thyme sprigs. Bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened.
- Discard thyme; stir in lemon juice. Spoon cranberry sauce over chicken.

- ¼ cup crumbled goat cheese
- ½ Tbsp butter

- Heat potatoes according to package directions; stir in cheese and butter.
