Apple-Infused Pork Roast

Ingredients

  • 2 lb boneless pork loin roast
  • 2 Tbsp all-purpose flour
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 Tbsp olive oil
  • ½ cup less sodium chicken broth
  • 2 red apples, sliced (such as Gala)
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder

Instructions

  1. Toss pork with flour; sprinkle with ½ tsp each salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet. Add broth to skillet, scraping skillet to loosen browned bits.
  2. Place apples, onion, garlic, chili powder, and ¼ tsp each salt and pepper in a 5- or 6-quart slow cooker. Place browned pork over apple mixture in cooker. Pour broth over pork.
  3. Cover and cook on LOW 8 hours or until pork is tender.

  • 2 lb Brussels sprouts, halved
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh rosemary
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 to 18 minutes or until browned, stirring once.
