Apple-Infused Pork Roast
Garlic-Rosemary Roasted Brussels SproutsIngredients
- 2 lb boneless pork loin roast
- 2 Tbsp all-purpose flour
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 Tbsp olive oil
- ½ cup less sodium chicken broth
- 2 red apples, sliced (such as Gala)
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp chili powder
Instructions
- Toss pork with flour; sprinkle with ½ tsp each salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet. Add broth to skillet, scraping skillet to loosen browned bits.
- Place apples, onion, garlic, chili powder, and ¼ tsp each salt and pepper in a 5- or 6-quart slow cooker. Place browned pork over apple mixture in cooker. Pour broth over pork.
- Cover and cook on LOW 8 hours or until pork is tender.

- 2 lb Brussels sprouts, halved
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 Tbsp chopped fresh rosemary
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
- Bake 15 to 18 minutes or until browned, stirring once.
