Crispy-Topped Loaded Potatoes
Ingredients
- 2 russet potatoes
- 1 Tbsp butter, cut into 2 pieces
- 1 cup shredded rotisserie chicken
- ⅓ cup barbecue sauce
- ½ cup shredded pepper Jack cheese
- ½ (3.5-oz) pkg garlic pepper crispy fried onions
- ¼ cup sweet and spicy pickles
Instructions
- Pierce potatoes several times with a fork. Microwave at HIGH 9 to 11 minutes or until tender. Cool slightly.
- Split and fluff potatoes; add butter. Season with salt and pepper, if desired. Mash lightly with a fork.
- Meanwhile, toss chicken with barbecue sauce. Microwave at HIGH 1 minute or until thoroughly heated.
- Top potatoes with saucy chicken, cheese, fried onions, and pickles.
