Crispy-Topped Loaded Potatoes

Ingredients

  • 2 russet potatoes
  • 1 Tbsp butter, cut into 2 pieces
  • 1 cup shredded rotisserie chicken
  • ⅓ cup barbecue sauce
  • ½ cup shredded pepper Jack cheese
  • ½ (3.5-oz) pkg garlic pepper crispy fried onions
  • ¼ cup sweet and spicy pickles

Instructions

  1. Pierce potatoes several times with a fork. Microwave at HIGH 9 to 11 minutes or until tender. Cool slightly.
  2. Split and fluff potatoes; add butter. Season with salt and pepper, if desired. Mash lightly with a fork.
  3. Meanwhile, toss chicken with barbecue sauce. Microwave at HIGH 1 minute or until thoroughly heated.
  4. Top potatoes with saucy chicken, cheese, fried onions, and pickles.
