Creamy Baked Spinach Ravioli
Ingredients
- 1 (25-oz) pkg frozen cheese ravioli
- 1 onion, diced
- 2 Tbsp olive oil
- 2 Tbsp minced garlic
- 1 (6-oz) pkg baby spinach
- ½ cup reduced-fat milk
- 1 Tbsp cornstarch
- 1 cup heavy cream
- 1½ cups grated Parmesan cheese, divided
Instructions
- Preheat oven to 350°F. Cook ravioli according to package directions.
- Meanwhile, cook onion in hot oil in a large ovenproof skillet over medium-high heat 8 minutes. Add garlic and spinach; cook 1 to 2 minutes or until garlic is fragrant and spinach wilts.
- Stir together milk and cornstarch. Add the cream and milk mixture to the skillet, reduce heat to medium, and cook 5 minutes or until thickened.
- Stir in ravioli and ¾ cup cheese until combined. Sprinkle with ¾ cup cheese. Bake 10 to 15 minutes or until top is lightly browned.
