Spicy Honey Mustard-Glazed Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 tsp garlic salt
  • ½ tsp cayenne pepper
  • ½ tsp black pepper
  • 2 Tbsp olive oil
  • ¼ cup honey
  • ¼ cup apple cider vinegar
  • 1 Tbsp Dijon mustard

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together garlic salt and both peppers; rub all over chicken. Cook chicken in hot oil in a large cast-iron skillet over medium-high heat 3 minutes per side or until browned.
  3. Stir together honey, vinegar, and mustard; brush on chicken. Transfer skillet to oven, and bake 10 minutes or until chicken is done.

Side Dish Ingredients

  • 1 (32-oz) pkg frozen deli-style roasted potatoes
  • 1 (8-oz) block Cheddar cheese, shredded
  • 2 green onions, thinly sliced
  • 1 (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Bake potatoes according to package directions; sprinkle with cheese, return to oven, and bake until cheese melts. Sprinkle with onions.
  2. Steam green beans according to package directions.
