Ingredients

  • 1 cup shredded rotisserie chicken
  • 1½ oz ⅓-less-fat cream cheese
  • 1 (4-oz) can diced mild green chiles
  • 2 cups spinach
  • 2 burrito-size flour tortillas
  • ⅓ cup salsa verde
  • ½ cup shredded Monterey Jack cheese
  • 1 green onion, thinly sliced

Instructions

  1. Preheat broiler. Cook chicken, cream cheese, and chiles in a skillet coated with cooking spray over medium-high heat 4 minutes or until thoroughly heated, stirring to combine. Add spinach, stirring until wilted.
  2. Divide chicken mixture between tortillas. Fold in sides of tortillas; roll up to completely enclose filling.
  3. Place burritos in a greased 9-inch baking dish. Top with salsa verde and cheese. Broil 2 to 3 minutes or until cheese is melted. Sprinkle with onion.
