Greek Chickpea Lettuce Wraps

Ingredients
- 1 cup whole wheat pearled couscous
- 2 (15-oz) cans chickpeas, rinsed and drained
- 3 Roma tomatoes, chopped
- ½ cup sliced red onion
- 2 cloves garlic, minced
- ¼ cup pine nuts
- 2 Tbsp olive oil
- 2 tsp vegan Greek seasoning
- 2 heads Bibb lettuce, leaves separated
- 1 cup crumbled feta cheese
- ¼ cup chopped fresh flat-leaf parsley
Instructions
- Cook couscous according to package directions; rinse under cold water to cool.
- Toss together couscous, chickpeas, tomatoes, onion, garlic, nuts, oil, and seasoning in a large bowl.
- Arrange lettuce in stacks of 2 leaves each; fill with couscous mixture. Sprinkle with cheese and parsley.
