Ingredients

  • 1 cup whole wheat pearled couscous
  • 2 (15-oz) cans chickpeas, rinsed and drained
  • 3 Roma tomatoes, chopped
  • ½ cup sliced red onion
  • 2 cloves garlic, minced
  • ¼ cup pine nuts
  • 2 Tbsp olive oil
  • 2 tsp vegan Greek seasoning
  • 2 heads Bibb lettuce, leaves separated
  • 1 cup crumbled feta cheese
  • ¼ cup chopped fresh flat-leaf parsley

Instructions

  1. Cook couscous according to package directions; rinse under cold water to cool.
  2. Toss together couscous, chickpeas, tomatoes, onion, garlic, nuts, oil, and seasoning in a large bowl.
  3. Arrange lettuce in stacks of 2 leaves each; fill with couscous mixture. Sprinkle with cheese and parsley.
