Ingredients

  • 6 burrito-size flour tortillas
  • ½ cup mayonnaise
  • ¾ tsp ground cumin
  • ¾ tsp paprika
  • ¾ tsp garlic powder
  • ¼ tsp cayenne pepper
  • 3 cups shredded rotisserie chicken
  • 1 (8-oz) block Monterey Jack cheese, shredded
  • 3 green onions, thinly sliced
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Place tortillas on a large greased rimmed baking sheet.
  2. Combine mayonnaise, cumin, paprika, garlic powder, and, if desired, cayenne in a large bowl. Add chicken; toss to coat.
  3. Spoon chicken mixture onto one side of each tortilla. Top with cheese and onions. Fold tortillas over filling; brush tortillas with oil. Bake 8 to 10 minutes or until cheese melts and tortillas are lightly browned. Cut into wedges.

  • ½ cup olive oil vinaigrette
  • 2 Tbsp lime juice
  • 2 tsp ground cumin
  • 1 head romaine lettuce, chopped

Side Dish Instructions

  1. Whisk together vinaigrette, lime juice, and cumin in a large bowl. Add lettuce; toss.
