Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ½ small onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ½ cup freshly shredded Parmesan cheese, divided
  • ¼ cup low sodium chicken broth
  • 1 (5-oz) pkg baby spinach
  • ½ pint grape tomatoes, halved
  • 1 Tbsp chopped fresh oregano

Instructions

  1. Heat rice according to package directions. Cook chicken, onion, and garlic in hot oil in a large, deep skillet over medium heat 7 to 9 minutes or until chicken is done.
  2. Add rice to skillet. Reduce heat to low. Add ¼ cup cheese and broth; cook 2 to 3 minutes, stirring, until creamy.
  3. Gradually add spinach until wilted. Stir in tomatoes, ¼ cup cheese, and oregano just before serving.
