Cheesy Mushroom Orzo

Ingredients
- 1 (16-oz) pkg sliced baby bella mushrooms
- 2 shallots, diced
- 2 Tbsp olive oil
- 2½ Tbsp all purpose flour
- 3 cups milk
- 3 cups low sodium vegetable broth
- 2¼ cups orzo
- 1½ cups shredded mozzarella cheese
- 1 (10-oz) pkg baby spinach
- ¾ tsp salt
- ½ tsp pepper
Instructions
- Cook mushrooms and shallots, if desired, in hot oil in a Dutch oven over medium-high heat 8 minutes or until lightly browned. Add flour, stirring until blended.
- Add milk, broth, and orzo; bring to a simmer. Reduce heat to medium, and cook 7 minutes, stirring occasionally, until orzo is almost tender.
- Stir in cheese, spinach, salt, and pepper; cook 2 to 3 minutes or until mixture thickens and spinach wilts.

- 2 (5-oz) pkg spring mix
- 2 apples, thinly sliced
- ⅓ cup chopped walnuts
- ⅓ cup olive oil vinaigrette

- Toss together all ingredients in a large bowl.
