Crispy Pork Cutlets

Ingredients

  • 1¼ cups panko breadcrumbs
  • ⅔ cup mayonnaise
  • 1 Tbsp mined garlic
  • ½ tsp pepper
  • ¼ tsp salt
  • 1½ lb thin boneless pork chops
  • 2 Tbsp olive oil
  • 1 lemon, cut into wedges

Instructions

  1. Place panko in a shallow bowl. Stir together mayonnaise, garlic, pepper, and salt in a bowl.
  2. Dip pork in mayonnaise mixture; dredge in panko mixture, shaking off excess.
  3. Cook pork, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until done.
  4. Serve with lemon wedges.

  • 1 (1-lb) pkg shaved Brussels sprouts
  • 2 Honeycrisp apples, thinly sliced
  • ¼ cup sweetened dried cranberries
  • ¼ cup olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Combine all ingredients in a large bowl.
