Italian Meatball Sliders
Italian Roasted Carrots
Ingredients
- 1½ (12-oz) pkg fully cooked Italian style chicken meatballs
- 2 Tbsp olive oil
- 2 Tbsp all purpose flour
- 1 cup milk
- 1 cup marinara sauce
- 12 slider buns
- ½ cup shredded mozzarella cheese
- ¼ cup chopped fresh parsley
Instructions
- Cook meatballs according to package directions.
- Meanwhile, cook oil and flour over medium-high heat in a large skillet 2 minutes. Add milk and marinara sauce; cook, whisking constantly, 5 minutes or until thickened. Remove from heat. Toss in meatballs.
- Serve meatballs on slider buns with cheese and parsley.
Side Dish Ingredients
- 2 lb carrots, trimmed
- 2 Tbsp olive oil
- 1½ Tbsp Italian seasoning
- ¼ cup freshly grated Parmesan cheese
- 2 Tbsp chopped fresh rosemary
Side Dish Instructions
- Preheat oven to 400°F. Toss carrots with oil and seasoning on a large rimmed baking sheet lined with parchment paper; spread in a single layer.
- Bake 20 minutes or until browned and tender. Remove from oven; sprinkle with cheese and rosemary.
