Mac and Cheese Melts
Mom's Fruit Salad
Ingredients
- ½ (16-oz) pkg cavatappi pasta
- 1 cup milk
- 3 Tbsp all purpose flour
- 1½ cups shredded Cheddar cheese
- ½ (8-oz) block cream cheese, softened
- 6 Tbsp butter, softened and divided
- ½ tsp pepper
- 6 slices Cheddar cheese
- 12 slices sourdough bread
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Meanwhile, bring milk to simmer in a large saucepan over medium heat. Add flour; cook, whisking constantly, until mixture is thickened and bubbly.
- Reduce heat to medium-low. Stir in shredded cheese, cream cheese, 3 Tbsp butter, and pepper until blended. Remove from heat; stir in cooked pasta and reserved pasta water.
- Top each of 6 bread slices with desired amount of pasta mixture and 1 cheese slice. Top with remaining bread slices.
- Spread 3 Tbsp butter on outsides of sandwiches. Cook sandwiches, in batches, in a large nonstick skillet over medium-low heat 4 to 5 minutes per side or until bread is toasted and cheese is melted.
Side Dish Ingredients
- 2 Honeycrisp apples, chopped
- 2 bananas, sliced
- 2 cups seedless red grapes
- 1 (20-oz) can pineapple tidbits, drained
- 1 (10-oz) jar marachino cherries, drained
Side Dish Instructions
- Toss together all ingredients in a large bowl.
