Mac and Cheese Melts

Ingredients

  • ½ (16-oz) pkg cavatappi pasta 
  • 1 cup milk 
  • 3 Tbsp all purpose flour 
  • 1½ cups shredded Cheddar cheese 
  • ½ (8-oz) block cream cheese, softened
  • 6 Tbsp butter, softened and divided
  • ½ tsp pepper 
  • 6 slices Cheddar cheese 
  • 12 slices sourdough bread

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Meanwhile, bring milk to simmer in a large saucepan over medium heat. Add flour; cook, whisking constantly, until mixture is thickened and bubbly.
  3. Reduce heat to medium-low. Stir in shredded cheese, cream cheese, 3 Tbsp butter, and pepper until blended. Remove from heat; stir in cooked pasta and reserved pasta water.
  4. Top each of 6 bread slices with desired amount of pasta mixture and 1 cheese slice. Top with remaining bread slices.
  5. Spread 3 Tbsp butter on outsides of sandwiches. Cook sandwiches, in batches, in a large nonstick skillet over medium-low heat 4 to 5 minutes per side or until bread is toasted and cheese is melted.

Side Dish Ingredients

  • 2 Honeycrisp apples, chopped
  • 2 bananas, sliced
  • 2 cups seedless red grapes
  • 1 (20-oz) can pineapple tidbits, drained
  • 1 (10-oz) jar marachino cherries, drained

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
