Balsamic-Dijon Tuna Steaks
Garlic Roasted Potatoes and Green Beans

Ingredients
- 1 lb ahi tuna steaks
- ½ tsp crushed dried rosemary
- ¼ tsp dried thyme
- ¼ plus ⅛ tsp kosher salt, divided
- ¼ plus ⅛ tsp pepper, divided
- 3 Tbsp olive oil, divided
- 1½ Tbsp balsamic vinegar
- ½ Tbsp Dijon mustard
- 1 tsp maple syrup
- 2 cloves garlic, minced
Instructions
- Sprinkle tuna steaks with rosemary, thyme, and ¼ tsp each salt and pepper. Cook steaks in 1 Tbsp hot oil in a large skillet over medium-high heat 2 to 5 minutes per side or to desired doneness. Remove from skillet.
- Add 2 Tbsp oil, vinegar, mustard, maple syrup, garlic, and ⅛ tsp each salt and pepper to skillet. Cook over medium heat 3 minutes or until thickened.
- Slice tuna; drizzle with sauce.

- 1 lb multicolored baby potatoes, halved
- 2 Tbsp olive oil
- 3 cloves garlic, minced
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1 (8-oz) pkg thin green beans
Side Dish Instructions
- Preheat oven to 425°F. Toss together potatoes, oil, garlic, and ¼ tsp each salt and pepper on a lightly greased rimmed baking sheet; spread in a single layer.
- Bake 30 to 35 minutes or until potatoes are browned and crisp.
- Meanwhile, microwave green beans according to package directions; season with salt and pepper, if desired.
