Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • ¼ cup sour cream
  • 1 Tbsp Ranch dressing mix
  • ⅓ cup panko breadcrumbs
  • ⅓ cup shredded sharp Cheddar cheese

Instructions

  1. Preheat oven to 450°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Mix together sour cream and half of dressing mix in a bowl. Combine breadcrumbs, cheese, and half of dressing mix in another shallow bowl.
  3. Spread sour cream mixture on one side of each chicken breast; dredge coated side in breadcrumb mixture, pressing to adhere. Place chicken, coated side up, in a small greased baking dish.
  4. Bake 15 to 18 minutes or until chicken is done.

  • 1 Tbsp olive oil
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

  1. Cook vegetables according to package directions. Toss with oil, garlic powder, salt, and pepper.
