Breakfast Pork Chops with Warm Apples

Ingredients

  • 4 (6-oz) boneless pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 1 Gala apple, sliced
  • ¼ cup chicken broth
  • 1 Tbsp apple cider vinegar
  • ¼ tsp dried thyme

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in 1½ Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until browned; remove from skillet.
  2. Heat 1½ Tbsp oil in skillet. Add apple; reduce heat to medium, and sauté 6 to 8 minutes or until browned and tender.
  3. Return pork to skillet; add broth, vinegar, and thyme. Cook 1 to 2 minutes or until broth has evaporated and chops are done. Serve apples with pork chops.
