Breakfast Pork Chops with Warm Apples

Ingredients
- 4 (6-oz) boneless pork chops
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil, divided
- 1 Gala apple, sliced
- ¼ cup chicken broth
- 1 Tbsp apple cider vinegar
- ¼ tsp dried thyme
Instructions
- Sprinkle pork with salt and pepper. Cook pork in 1½ Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until browned; remove from skillet.
- Heat 1½ Tbsp oil in skillet. Add apple; reduce heat to medium, and sauté 6 to 8 minutes or until browned and tender.
- Return pork to skillet; add broth, vinegar, and thyme. Cook 1 to 2 minutes or until broth has evaporated and chops are done. Serve apples with pork chops.
