Honey-Apricot Chicken
Brown Rice and Garlic-Honey Broccoli
Ingredients
- ½ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
- 3 Tbsp apricot preserves
- 1 Tbsp honey
- ⅛ tsp dried thyme
Instructions
- Pound chicken to an even thickness using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper.
- Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side.
- Stir together preserves, honey, and thyme. Add to skillet, reduce heat to medium, and cook 3 to 4 minutes or until thickened, turning to coat chicken.

- ½ cup long-grain brown rice
- 1½ cups frozen broccoli florets
- 2 tsp minced garlic
- 1 tsp olive oil
- 2 tsp less-sodium soy sauce
- 2 tsp honey
Side Dish Instructions
- Cook rice and broccoli according to package directions.
- Meanwhile, cook garlic in hot oil in a large skillet over medium-high heat 1 to 2 minutes or until fragrant. Reduce heat to medium; add soy sauce and honey, stirring to combine.
- Add broccoli, tossing to coat. Cook until thoroughly heated.
