Sweet Italian "Sausage" and Cauliflower Bake

Ingredients
- 1 (12-oz) pkg cauliflower florets
- 2 links plant-based sweet Italian sausage, casings removed
- ½ cup chopped onion
- 2 small cloves garlic, minced
- 1 Tbsp olive oil
- ¾ cup no-sugar-added marinara sauce
- 2 Tbsp pitted coarsely chopped kalamata olives
- ½ cup shredded whole-milk mozzarella cheese
Instructions
- Preheat oven to 400°F. Cook cauliflower according to package directions.
- Meanwhile, cook sausage, onion, and garlic in hot oil in a skillet over medium-high heat 4 to 6 minutes or until sausage is browned and crumbly.
- Stir in cauliflower, marinara sauce, and olives. Spoon into a lightly greased 9-inch baking dish. Top with cheese.
- Bake 18 to 20 minutes or until thoroughly heated.

- ¼ cup balsamic vinaigrette
