Salmon Southwest Salad
Momma's Cheese NachosIngredients
- 6 (6-oz) skinless salmon fillets
- 1½ Tbsp less sodium taco seasoning mix
- 3 Tbsp olive oil
- 2 (10.3-oz) Southwest salad kits
- 1 (5-oz) pkg spinach
Instructions
- Sprinkle salmon with seasoning mix. Cook salmon in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or to desired doneness.
- Meanwhile, prepare salad kits according to package directions in a large bowl. Add spinach; toss. Flake salmon into large pieces; add to salad in bowl. Toss again, and serve immediately.

- 1 (12-oz) pkg nacho cheese-flavored tortilla chips
- 1 (8-oz) pkg shredded Colby-Jack cheese
Side Dish Instructions
- Preheat oven to 400°F. Arrange chips on a lightly greased foil-lined baking sheet; sprinkle with cheese. Bake 6 minutes or until cheese is melted.
