Barbecue Chicken Tenders

Ingredients

  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1½ Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1 large egg
  • 2 cups barbecue sauce, divided
  • 1½ lb chicken tenderloins

Instructions

  1. Preheat oven to 425°F. Stir together breadcrumbs, cheese, oil, and seasoning in a shallow dish. Whisk together egg and ½ cup barbecue sauce in a large bowl. Add chicken; toss.
  2. Remove chicken from barbecue mixture; dredge in breadcrumb mixture, shaking off excess. Place on greased wire rack on a rimmed baking sheet. Coat with olive oil cooking spray.
  3. Bake 20 minutes or until chicken is done.
  4. Meanwhile, heat remaining 1½ cups barbecue sauce in a small saucepan over medium-low heat. Drizzle over chicken.

  • 1 (12-oz) pkg broccoli florets
  • 1 (8-oz) pkg kettle cooked potato chips
  • ½ cup Ranch dressing

Side Dish Instructions

  1. Serve broccoli and chips with Ranch dressing for dipping.
