Chicken Breast Club "Sandwiches"

Ingredients

  • 4 (5-oz) boneless, skinless chicken breasts
  • 3 Tbsp olive oil
  • 4 slices bacon
  • 3 Tbsp Dijon mustard
  • 2 Tbsp mayonnaise
  • 4 romaine lettuce leaves, halved (or use other salad greens)
  • 1 small tomato, halved and thinly sliced

Instructions

  1. Pound chicken to ¼-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken lightly with salt and pepper.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 4 minutes per side or until done.
  3. Meanwhile, cook bacon in a small skillet 5 to 6 minutes or until crisp; drain.
  4. Combine mustard and mayonnaise in a small bowl.
  5. Cut chicken breasts in half lengthwise, cutting to but not through other side. Spread mustard mixture on cut sides of chicken.
  6. Layer bacon, lettuce, and tomato on each "sandwich." Serve each sandwich with a knife and fork.

  • 6 Tbsp chipotle mayonnaise
  • 2 Tbsp buttermilk
  • ½ tsp garlic salt
  • 4 cups thinly shredded cabbage

Side Dish Instructions

  1. Combine mayonnaise, buttermilk, and garlic salt in a large bowl. Add cabbage, and toss. Chill until ready to serve.
