Citrus Chicken
Pecan Green BeansIngredients
- 2 oranges
- 1 lemon
- 1 lime
- ¼ cup olive oil
- 2 cloves garlic, minced
- 3 (6-oz) boneless, skinless chicken breasts, halved crosswise
Instructions
- Grate zest from oranges, lemon, and lime into a large bowl; squeeze juice from oranges, and add to bowl.
- Add oil, garlic, and chicken; chill at least 30 minutes.
- Heat a grill pan or cast-iron skillet over medium-high heat. Remove chicken from marinade, reserving marinade.
- Cook chicken 6 minutes per side or until done.
- Meanwhile, bring marinade to a boil in a saucepan; boil 5 minutes. Drizzle over chicken.

- 1½ lb green beans, trimmed
- 3 Tbsp chopped pecans
- 3 Tbsp butter
- ½ tsp salt
Side Dish Instructions
- Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
- Cook nuts in butter in a skillet over medium heat until fragrant. Add beans, and sprinkle with salt. Toss.
