Citrus Chicken

Pecan Green Beans

Ingredients

  • 2 oranges
  • 1 lemon
  • 1 lime
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 3 (6-oz) boneless, skinless chicken breasts, halved crosswise

Instructions

  1. Grate zest from oranges, lemon, and lime into a large bowl; squeeze juice from oranges, and add to bowl.
  2. Add oil, garlic, and chicken; chill at least 30 minutes.
  3. Heat a grill pan or cast-iron skillet over medium-high heat. Remove chicken from marinade, reserving marinade.
  4. Cook chicken 6 minutes per side or until done.
  5. Meanwhile, bring marinade to a boil in a saucepan; boil 5 minutes. Drizzle over chicken.

Side Dish Ingredients

  • 1½ lb green beans, trimmed
  • 3 Tbsp chopped pecans
  • 3 Tbsp butter
  • ½ tsp salt

Side Dish Instructions

  1. Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
  2. Cook nuts in butter in a skillet over medium heat until fragrant. Add beans, and sprinkle with salt. Toss.
