Italian Tuna Cakes

Tangy Broccoli-Parmesan Salad

Ingredients

  • 8 slices bacon
  • 4 (5-oz) cans wild-caught albacore tuna, drained
  • ⅓ cup mayonnaise
  • 2 large egg whites
  • 3 Tbsp almond flour
  • 3 Tbsp chopped fresh parsley
  • 1 Tbsp Italian seasoning
  • 2 tsp lemon zest
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 2 Tbsp vegetable oil

Instructions

  1. Cook bacon in a large cast-iron or nonstick skillet until crisp. Remove from skillet, reserving drippings. Crumble bacon.
  2. Combine tuna, bacon, mayonnaise, egg whites, flour, parsley, seasoning, zest, garlic powder, and pepper; shape mixture into 12 patties.
  3. Add 1 Tbsp oil to drippings in skillet. Cook 6 patties in hot oil over medium heat 3 to 4 minutes per side or until done. Remove from skillet.
  4. Repeat procedure with 1 Tbsp oil and 6 patties.

Side Dish Ingredients

  • 6 cups broccoli florets
  • ¼ cup sliced red onion
  • 7 Tbsp olive oil vinaigrette
  • 2 Tbsp lemon juice
  • ¼ tsp pepper
  • ¼ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Combine broccoli and onion in a bowl.
  2. Whisk together vinaigrette, lemon juice, and pepper; pour over broccoli. Toss; sprinkle with cheese. Refrigerate 30 minutes before serving.
