Italian Tuna Cakes
Tangy Broccoli-Parmesan Salad
Ingredients
- 8 slices bacon
- 4 (5-oz) cans wild-caught albacore tuna, drained
- ⅓ cup mayonnaise
- 2 large egg whites
- 3 Tbsp almond flour
- 3 Tbsp chopped fresh parsley
- 1 Tbsp Italian seasoning
- 2 tsp lemon zest
- ½ tsp garlic powder
- ½ tsp pepper
- 2 Tbsp vegetable oil
Instructions
- Cook bacon in a large cast-iron or nonstick skillet until crisp. Remove from skillet, reserving drippings. Crumble bacon.
- Combine tuna, bacon, mayonnaise, egg whites, flour, parsley, seasoning, zest, garlic powder, and pepper; shape mixture into 12 patties.
- Add 1 Tbsp oil to drippings in skillet. Cook 6 patties in hot oil over medium heat 3 to 4 minutes per side or until done. Remove from skillet.
- Repeat procedure with 1 Tbsp oil and 6 patties.
Side Dish Ingredients
- 6 cups broccoli florets
- ¼ cup sliced red onion
- 7 Tbsp olive oil vinaigrette
- 2 Tbsp lemon juice
- ¼ tsp pepper
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Combine broccoli and onion in a bowl.
- Whisk together vinaigrette, lemon juice, and pepper; pour over broccoli. Toss; sprinkle with cheese. Refrigerate 30 minutes before serving.
