Ingredients
- ½ (13-oz) pkg smoked turkey sausage, sliced
- 1 large shallot, chopped
- 1 Tbsp olive oil
- ½ Tbsp minced garlic
- 1 (15-oz) can low sodium cannellini beans, rinsed and drained
- ¾ cup low sodium chicken broth, divided
- 1 Tbsp chopped fresh rosemary
- 2 cups chopped kale
- ½ cup freshly grated Parmesan cheese
Instructions
- Cook sausage and shallot in hot oil in a skillet over medium-high heat 6 to 8 minutes or until lightly browned. Add garlic; cook 1 minute or until fragrant.
- Reduce heat to medium; stir in two-thirds of beans, ½ cup broth, and rosemary until blended. Mash remaining beans; add to skillet. Cook 2 to 3 minutes or until thoroughly heated.
- Stir in kale, cheese, and ¼ cup broth; cook 2 minutes or until creamy and kale wilts.

- 1 Tbsp butter, softened
- 1 Tbsp olive oil
- ⅛ tsp kosher salt
- 3 oz whole wheat French bread, heated and sliced
Side Dish Instructions
- Combine butter, oil, and salt; serve with bread.
