Ingredients

  • ½ (13-oz) pkg smoked turkey sausage, sliced
  • 1 large shallot, chopped
  • 1 Tbsp olive oil
  • ½ Tbsp minced garlic
  • 1 (15-oz) can low sodium cannellini beans, rinsed and drained
  • ¾ cup low sodium chicken broth, divided
  • 1 Tbsp chopped fresh rosemary
  • 2 cups chopped kale
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook sausage and shallot in hot oil in a skillet over medium-high heat 6 to 8 minutes or until lightly browned. Add garlic; cook 1 minute or until fragrant.
  2. Reduce heat to medium; stir in two-thirds of beans, ½ cup broth, and rosemary until blended. Mash remaining beans; add to skillet. Cook 2 to 3 minutes or until thoroughly heated.
  3. Stir in kale, cheese, and ¼ cup broth; cook 2 minutes or until creamy and kale wilts.

Side Dish Ingredients

  • 1 Tbsp butter, softened
  • 1 Tbsp olive oil
  • ⅛ tsp kosher salt
  • 3 oz whole wheat French bread, heated and sliced

Side Dish Instructions

  1. Combine butter, oil, and salt; serve with bread.
